Alison’s Gluten Free Organic Chicken Tortilla Soup
– 1 Tbsp Sunflower Oil or any high heat oil
– 1/2Organic Onion Chopped
– 2 cloves of Organic garlic minced
– 2 Cups Free Range Chicken Broth
– 1 Tbsp Cumin
– 1 Tbsp Chili Powder
– 1 14.5oz can of Organic Diced Tomatoes with Chilies
– 1 15oz can of Organic Black Beans (un-drained)
– 1 12 oz bag of Frozen Organic Corn
– 2 Boneless Skinless Free Range Chicken breasts
– Organic Corn Tortilla’s or Organic corn chips
1. heat the oil in the crock pot and add the onion and Garlic, and heat on high for 5 minutes
2. add the chicken broth, cumin, chili powder, diced tomatoes, and frozen corn and stir it all together
3. Add the Chicken and cook on high for 4 hours or until the chicken is fully cooked
4. when the chicken is fully cooked take it out of the crock pot and shred it and put it back in
5. cut the tortilla’s or chips into bite size pieces and put in serving bowls and add the soup and enjoy! =)
